Once again, I knew it before I ever did the puzzle! Your questions told me all I needed to know but I'll let others guess.
I do believe we also got to see this song as an extra on that season's DVD set.

Question 3: In what other episodes have we heard this song?
Setup - Playing when Castle/Beckett are talking to the guy who installed cameras in the cab driver's car.
Watershed - I heard it too at the beginning of the episode.

Oh gosh, I know this is Lucky Stiff, right? The ending, where Kate is playing the guitar? I think it's ep 14, season 3, for sure.
I have to think about the bonus questions. I stink at this any more.... sigh............
