Happy Thanksgiving Everyone!If you normally celebrate, I hope you had a lovely and safe holiday. We remained home this year but my daughter and I were able to do my favorite Thanksgiving tradition. We plan a big breakfast, (today's was chocolate chip pancakes with strawberries and whipped cream on top, bacon, hash browns, and fresh raspberries), huge hot chocolates with marshmallows, and we cuddle up on the couch to eat, drink and watch the parade from beginning to end. So I was especially thankful that they managed to pull off the parade despite the restrictions due to Covid. Our other Thanksgiving tradition is a little different. We always take our family, my Dad, and my in-laws to our favorite Mexican restaurant in NY. Unfortunately, that wasn't an option this year. So we ordered trays of enchiladas and all the fixings from a local Mexican restaurant and then delivered portions of it to my Dad and my mother-in-law. (My brother-in-law and his girlfriend are two hours away so they had to fend for themselves.) Honestly, the food wasn't as good as it is from our favorite restaurant, but it still made for a nice day, and we're just generally thankful that our family is healthy and hope that we will all be able to get together again next year.
