***** Since we're all staying in and cooking more, I thought I'd post a recipe for an easy dessert that I made today. Peach Cobbler 1- 29oz can sliced peaches drained (I cut them up a little, but not necessary) 1 C sugar 1 C flour 1 T baking powder 1 C milk 1 stick butter melted Combine dry ingredients. Add milk and butter. Stir in fruit and pour into 13x9 dish. Bake @ 350 for 35-40 minutes. Can serve plain or with vanilla ice cream. I've also made this with blueberries and raspberries. Enjoy!

Here is my favorite Banana Bread recipe:
Ingredients:
-1/2 cup softened butter
-1/2 cup granulated sugar
- 2 eggs, beaten
-3-4 bananas (finely crushed)
-1 & 1/2 cups all purpose flour
-1 teaspoon baking soda
-1/2 teaspoon salt
-1/2 teaspoon vanilla (optional)
Directions:
-Preheat oven to 350º F/ 180º C.
-Cream together butter and sugar. -Add eggs and crushed bananas. Combine well. -Sift together flour, baking soda and salt. Add to creamed mixture. Add vanilla. -Mix just until combined. Do not overmix. -Pour into greased and floured loaf pan.
-Bake at 350º / 180º for 55 minutes.

This is simple but good chilli.
9 CAN CHILLI
1 LB. extra lean ground beef or ground turkey
1 onion chopped
2 cans Rotel tomatoes
2 cans diced tomatoes with garlic
1 can diced tomatoes
1 8oz. can tomato sauce
1 can white beans
1 can black beans
1 can pinto beans
1 16oz. bag coleslaw mix ( I know this sounds strange but it really makes this recipe)
I usually add some chilli powder to taste.
Brown onion and ground beef together and drain.
Combine all ingredients into a large pot and heat to boiling.

White Chili
2 15.8 oz cans of reduced sodium great northern beans (I've occasionally used 3 cans) 1 14.5 oz can Swanson chicken broth (33% less sodium) 1 24 oz jar Pace Chunky Salsa - Medium 1 12.5 oz can Swanson white Premium Chunk Chicken 1 tsp oregano (optional) 1/2 tsp celery salt (optional)
Dump everything in a 4 qt pot and let it simmer for a bit. Garnish with shredded mozzarella or cheddar cheese. Easiest recipe ever and plenty of flavor.

Since we're talking chili, I'll share mine. I always prefer meat chili (no beans).
1 lbs. of ground beef 1/2 onion, diced 1 cloves of garlic, minced 1/2 red or 1/2 green bell pepper, (or combine the two) diced
(1) 14-ounce can of crushed or stewed tomatoes (1) 14-ounce can of diced tomatoes (1) 8-ounce can of tomato sauce
Spices 2 Tbsp. of chili powder 1/2 Tbsp. of oregano 1/2 Tbsp. of basil 1/2 tsp. of cumin 1/2 tsp. of salt 1 tsp. pepper 1/2 tsp. onion powder 1/2 tsp. of cayenne
Instructions
-Sauté onions and garlic together in a large saucepan over medium heat -Add in ground beef to the saucepan and cook just until browned. Drain excess fat. -Transfer the cooked onions, garlic and meat to your crockpot/slow-cooker/pot -Add all the above vegetables and spices to the crockpot. -Give the pot a good stir -Set crockpot to LOW, cover, and slow cook for about 3-4 hours -Spoon into individual bowls.
Serve hot and enjoy!

Christine, I made your banana bread recipe this morning. It's delicious! I like using a dish 11x7 instead of a loaf pan, and was done in about 36 minutes. Our youngest daughter and her boyfriend came over and it's about half gone already, lol.

I am making the banana bread this morning for something different. I have been doing my bran muffin recipe 4 days a week. I got this recipe years ago and have been using it since. You make this up and then store it in a Tupperware type sealed container in your fridge. It keeps for weeks in the fridge. I make them up fresh in the morning one or two person. You can make them for each person to their taste by adding fresh or frozen fruit or raisins, currents, etc. my favorite is raspberries. I put 3 or 4 in the middle of each. I put a scoop of batter then I add the raspberries then another scoop of batter. Bran muffins tend to be dry, these are very moist as you make them and eat them right away. The hard part with the shortages is finding the cereal. You will have to find a larger store like Walmart or Kroger, Safeway etc to find the Bran Buds and All Bran cereal. I hope you and your family enjoy these healthy muffins as much as I have over the years.
Bran Muffins makes 2 dozen but I usually only make 2 to 4 at a time Oven 425 cook time 25-27
1Cup All Bran cereal 2Cups Bran Buds Cereal 1Cup boiling water (zap for 4 min to boil the water) Put the cereal in your mixing bowl and add the water. Mix in water and let it sit for 5 min to soften.
Add 2C Buttermilk 1 1/4 C sugar ( I have used stevia natural sugar sometimes) 1/2 C oil ( use any kind of oil you want to be healthy) 2 eggs (I have used egg beaters when eggs were not available) 1/4 tsp salt 2 1/2 tsp soda 3 C flour
mix until blended store in Tupperware type container in the refrigerator for up to a month.
making muffins spray cooking spray in the bottom of the muffin tin that you will use. I put a scoop of batter in the bottom then add fresh or frozen fruit or raisins. Add another scoop of batter on top. If your fruit is frozen cook for 27 min

I've made the same recipe as mini-muffins for my daughter's school but I've never used anything but a loaf pan for an actual banana bread. I should try it in other pans and see how it turns out.

I've made the same recipe as mini-muffins for my daughter's school but I've never used anything but a loaf pan for an actual banana bread. I should try it in other pans and see how it turns out. It's very moist and not crusty on top like in a loaf pan. More like a dense cake. I made it again and added 1/2 C chopped pecans. Yum!

Nachos
1 lb ground beef 1 onion diced 1 30oz can refried beans 1 jar salsa 1 4oz can diced green chiles 2-4 C shredded cheese ( I like Colby/Jack. It melts nice.) Sour cream Tortilla chips
Brown hamburger and add onion. In a 13x9 baking dish, spread beans in bottom; spread hamburger/onion on top; mix salsa and chiles together and put on top of meat; cover with cheese. Bake @ 350* for 45 minutes or until cheese is melted. Serve with sour cream and tortilla chips.

Microwave Cheesecake
16 oz cream cheese 1 C sugar 3 eggs 1 T lemon juice graham cracker crust (I buy graham cracker crumbs and follow crust recipe on the box.)
Beat cream cheese and sugar. Add eggs and lemon juice and mix well. Make crust. I usually add an extra T of butter. Spray a microwave-safe bundt pan with Pam. Press cracker mixture in bottom of pan and up the sides a little. Pour in cheese mixture. Bake @ 50% power for 15 minutes. Cool and refrigerate.

Cranberry Jello Salad
1 12oz. bag cranberries 1 C sugar (or sugar substitute. I use Splenda.) 1 apple diced 1/2 C celery diced 1/4 C chopped nuts 1 6oz. box (or 2 3oz. boxes) jello (raspberry or strawberry--I use sugar free)
Grind (don't chop) cranberries. Mix in sugar and set aside. Make jello. I use the speed set method on the box. Refrigerate so it starts to thicken. Dice the apple and celery and chop the nuts. When the jello has thickened, add all ingredients and mix well. Refrigerate over night.
I make this every Thanksgiving. People who usually don't like cranberries like this, lol.
